Klessig's Pad Thai

Sauce:
8 parts soy sauce
1 part sugar
1-2 parts vinegar
2-3 paprika (mix some cyan for extra heat)
1 part lime juice (fresh)

Section 1 Ingredients:
enough peanut (or other) oil to cook meat in
handful or two of meat (cut up small) to taste
or
8oz FIRM tofu, cut in strip with a citrus marinade
1tsp dried crushed chili pepper
the following seasonings to taste: basil, mint, rosemary, thyme, just about every seasoning in the book

Section 2 Ingredients
1/2c chopped cilantro
4tsp pressed or finely chopped garlic
5 chopped green onions
3/4c chopped mushrooms (choose your favorite.  straw mushrooms are good)
1c crushed peanuts
2/3c diced red bell pepper
1/4c of secret ingredient


Section 3 Ingredients
1lb rice sticks (do not substitute with pasta) (replacing rice sticks with white rice makes for a pretty good fried rice version)
8oz bean sprouts (fresh and still crunchy)

1.) prepare rice sticks (usually 8 min in warm water will have best results)
2.) heat oil in large pan
3.) mix sauce, set aside (the sauce probably won't smell so nice at this point.  don't worry, it's normal.)
4.) add meat or tofu to pan, cook for 50-80 sec and start to add  rest of Section 1 Ingredients as meat browns
5.) when meat is browned.  add section 2 ingredients for 30 sec and add sauce.  let cook for a minute or so. add extra lime
6.) noodles for about 2 min.
7.) serve the dish on a bed of bean sprouts with a lime chunks on the side.

the citrus marinade for the tofu should be straightforward. just take the tofu from the package, cut it into large chunks. dry each chunk on a paper towel (the drier it gets, the more it will absorb), and put in a container with fresh lemon and lime (and perhaps a little orange) juice for 6 hours in the fridge. to be honest, i have yet to try this marinade, so i would like input on a better design or how this one turned out.

this has been a successful recipe for me. should serve 4 if along with some bread, egg roll, or other small side.
